Brush chicken breasts with olive oil, front and back.
Dust with taco seasoning.
Sprinkle with Mexican Oregano and Spanish Thyme (Available at Rogers for $4 each in Edmore)
Bake at 400 degree, for approximately 30 minutes. (Use a meat thermometer.)
Slice chicken and saute with green peppers. Additional seasoning, including fajita or taco seasoning can be added for additional flavor.
Serve on flour tortillas or over Green Chili Smashed Potatoes
Sliced chicken and sliced green peppers can be frozen separately.
